Your stance is the main thing that dictates the length of your SUP paddle. For instance, if you are doing long distance touring then you'll be in an upright position whilst paddling. When paddling on whitewater or surfing you are going to be in a lower position to bring your centre of gravity down. The lower you are the shorter the paddle.

More experienced paddlers tend to be able to stand more upright and can control the extra leverage and instability. Beginner SUP paddlers tend to crouch more and don’t want the same leverage on the paddle.
